- 1 block firm tofu, drained and pressed
- 1 red bell pepper, diced
- 2/3 cup of sliced mushrooms
- 2 green onion sprigs, thinly sliced
- 2 eggs, scrambled
- 3 tablespoons grapeseed oil
- Black pepper and any other sodium-free seasonings to taste
- Whole wheat pita bread
INSTRUCTIONS:
- In a non-stick pan, add oil and saute bell peppers for 3 minutes over medium heat.
- Add mushrooms and onions, and stir for 2-3 minutes.
- Crumble tofu block into pan and saute for 3-4 minutes.
- Add scrambled egg and stir until egg is no longer runny.
- Season with pepper & other herbs or spices of choice.
- Serve in pita bread & enjoy!
