RECIPE: Tofu Scramble

INGREDIENTS:
  • 1 block firm tofu, drained and pressed
  • 1 red bell pepper, diced
  • 2/3 cup of sliced mushrooms
  • 2 green onion sprigs, thinly sliced
  • 2 eggs, scrambled
  • 3 tablespoons grapeseed oil
  • Black pepper and any other sodium-free seasonings to taste
  • Whole wheat pita bread

INSTRUCTIONS:
  • In a non-stick pan, add oil and saute bell peppers for 3 minutes over medium heat. 
  • Add mushrooms and onions, and stir for 2-3 minutes. 
  • Crumble tofu block into pan and saute for 3-4 minutes. 
  • Add scrambled egg and stir until egg is no longer runny. 
  • Season with pepper & other herbs or spices of choice.
  • Serve in pita bread & enjoy!
