RECIPE: Spinach Feta Egg Muffins

INGREDIENTS:
  • 1 cup spinach (steamed & drained)
  • 1/2 cup feta cheese
  • 1/2 cup mild cheddar cheese
  • 2 strips of reduced-sodium, low-fat turkey bacon (chopped) - optional
  • 6 whole eggs or 12 egg whites (whisked) 

INSTRUCTIONS:
  • Preheat oven to 400 degrees.
  • Mix all ingredients and pour mixture into muffin pan.
  • Bake at 400 degrees for 30 minutes.
  • Enjoy!
