RECIPE: Black Bean Soup & Salad

Here's a delicious & hardy meal that's quick & simple to prepare on busy weekday evenings.

BLACK BEAN SOUP INGREDIENTS: 
  • 2 - 8 oz. cans of black beans
  • 2 cups of vegetable stock
  • 1/2 cup salsa
  • 2 tablespoons plain Greek yogurt

BLACK BEAN SOUP INSTRUCTIONS:
  1. Combine the vegetable stock, beans and salsa in a pot.
  2. Bring to a boil, then simmer for 30 minutes.
  3. Add Greek yogurt.
  4. Blend with a submersible blender to the desired consistency.
  5. Serve in a soup bowl.

SALAD INGREDIENTS: 
  • Romaine spears 
  • 1 tablespoon crumbled blue cheese
  • 1 tomato, sliced

SALAD INSTRUCTIONS:
  1. Cut Romaine into bite size pieces
  2. Add crumbled blue cheese
  3. Add the tomato
