BLACK BEAN SOUP INGREDIENTS:
- 2 - 8 oz. cans of black beans
- 2 cups of vegetable stock
- 1/2 cup salsa
- 2 tablespoons plain Greek yogurt
- Combine the vegetable stock, beans and salsa in a pot.
- Bring to a boil, then simmer for 30 minutes.
- Add Greek yogurt.
- Blend with a submersible blender to the desired consistency.
- Serve in a soup bowl.
SALAD INGREDIENTS:
- Romaine spears
- 1 tablespoon crumbled blue cheese
- 1 tomato, sliced
SALAD INSTRUCTIONS:
- Cut Romaine into bite size pieces
- Add crumbled blue cheese
- Add the tomato
