RECIPE: Creamy Cauliflower Soup

In the mood for comfort food, but want to keep it healthy? Try this yummy, simple recipe.

INGREDIENTS: 

  • 1 head cauliflower, chopped
  • 1 bunch green onions 
  • 1 clove garlic
  • 2 cups low sodium chicken broth
  • fresh thyme to taste
  • 1/2 cup water
  • 1/4 cup almond milk or low-fat milk
  • 1 tablespoon yogurt butter
  • TJ's 21 Seasoning Salute to taste 

INSTRUCTIONS:
  1. Sautee the green onions and garlic.
  2. Add chicken broth, cauliflower, thyme and water. 
  3. Boil until cauliflower is tender. 
  4. Blend until smooth. (Immersion blender works best. Otherwise, blend in batches in a blender.)
  5. Add milk, yogurt butter and 21 Seasoning Salute.
  6. Simmer 5 minutes.
  7. Enjoy!
