Here's a delicious & quick weeknight dinner. Serves two.
INGREDIENTS:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 tablespoons Thai Chili Garlic Paste
- 3-4 cloves of garlic
- 6 oz. chicken, cut into small strips
- 3 stalks green onions
- 1/2 onion
- 2 stalks celery
- 1/4 cabbage
- 2 medium carrots
- handful of Brussels sprouts
- 1-2 red peppers
- 1/2 broccoli
- 10 mushrooms
INSTRUCTIONS:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 tablespoons Thai Chili Garlic Paste
- 3-4 cloves of garlic
- 6 oz. chicken, cut into small strips
- 3 stalks green onions
- 1/2 onion
- 2 stalks celery
- 1/4 cabbage
- 2 medium carrots
- handful of Brussels sprouts
- 1-2 red peppers
- 1/2 broccoli
- 10 mushrooms
- Sautee Chili Garlic Paste and garlic cloves in olive oil & butter in a wok or large pan.
- Add chicken strips and stir.
- Once chicken begins to brown, add onions, cabbage and celery.
- Sautee 10 minutes.
- Add the rest of the veggies and sautee an additional five minutes.
- Serve with brown rice and top with cilantro and cashews.
