Thai Chili Chicken & Veggies

Here's a delicious & quick weeknight dinner. Serves two.

INGREDIENTS:

  • 1 tablespoon olive oil 
  • 1 tablespoon butter
  • 2 tablespoons Thai Chili Garlic Paste
  • 3-4 cloves of garlic 
  • 6 oz. chicken, cut into small strips
  • 3 stalks green onions
  • 1/2 onion
  • 2 stalks celery
  • 1/4 cabbage
  • 2 medium carrots 
  • handful of Brussels sprouts
  • 1-2 red peppers
  • 1/2 broccoli 
  • 10 mushrooms

INSTRUCTIONS:

    • Sautee Chili Garlic Paste and garlic cloves in olive oil & butter in a wok or large pan.
    • Add chicken strips and stir. 
    • Once chicken begins to brown, add onions, cabbage and celery.  
    • Sautee 10 minutes.
    • Add the rest of the veggies and sautee an additional five minutes. 
    • Serve with brown rice and top with cilantro and cashews.
