RECIPE: Grilled Curry Chicken

This simple & healthy chicken recipe is great grilled, but if a grill is not available, you could bake it instead. 

Ingredients:
  • 1/3 can, light coconut milk
  • juice of 2 limes
  • 3 tablespoons curry
  • 1 tablespoon turmeric
  • 1 teaspoon ground pepper
  • 1 tablespoon refined coconut oil
  • 1 teaspoon onion powder
  • 6 chicken breasts
Instructions:
  • Mix first seven ingredients together in a shallow baking dish. 
  • Place chicken breasts in the dish and marinate for several hours. 
  • Grill or bake the chicken as desired.
