RECIPE: Roasted Butternut Squash

Roasting veggies is a simple and delicious way to get more vegetables into your diet! We love eating roasted butternut squash as a snack.

Makes 4 servings
152 calories per serving

Ingredients:
  • 1 large butternut squash (about 3 pounds), peeled, seeded and cut in 1-inch chunks (You can also purchase pre-cut butternut squash from Trader Joe's or Whole Foods.)
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
Instructions:
  • Preheat the oven to 400° F.
  • Place the squash on a sheet pan and drizzle with the olive oil, salt, and pepper and toss well. 
  • Arrange the squash in one layer and roast for 25 to 30 minutes, until the squash is tender and caramelized, turning once with a spatula.
