Ingredients:
- 1 small green cabbage, shredded
- 1/2 carrot, shredded
- 1 small bunch of mint, finely chopped
- zest of 1/2 lemon
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 tablespoon honey
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Combine Combine all ingredients in a bowl and mix together.
- Store slaw in the fridge overnight for a delicious pickled flavor.
