RECIPE: No Mayo Summer Cole Slaw

Here's a healthy & easy dish to take to a summer picnic or potluck.

Makes 4 servings
185 calories per serving

Ingredients:
  • 1 small green cabbage, shredded
  • 1/2 carrot, shredded
  • 1 small bunch of mint, finely chopped
  • zest of 1/2 lemon
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

    Instructions:
    • Combine Combine all ingredients in a bowl and mix together.
    • Store slaw in the fridge overnight for a delicious pickled flavor.
