- 1 cup dried quinoa
- 1 pepper (red or yellow), diced
- 1 medium cucumber (or 3 small Persian cucumbers), peeled, de-seeded and diced
- 1/2 cup fresh corn kernels, cut directly off the cob
- 1/3 cup crumbled feta cheese
- rice vinegar & olive oil (optional)
- Prepare quinoa according to the package instructions.
- Chop the vegetables while the quinoa cools.
- Combine all ingredients.
- This salad works well without any dressing, but if desired, you can add a small amount of olive oil & rice vinegar.
