RECIPE: Quinoa Garden Salad

Another delicious, nutritious and simple recipe submitted by one of our AAY! members. 

Ingredients:
  • 1 cup dried quinoa
  • 1 pepper (red or yellow), diced
  • 1 medium cucumber (or 3 small Persian cucumbers), peeled, de-seeded and diced
  • 1/2 cup fresh corn kernels, cut directly off the cob
  • 1/3 cup crumbled feta cheese
  • rice vinegar & olive oil (optional)
Instructions:
  • Prepare quinoa according to the package instructions.
  • Chop the vegetables while the quinoa cools.
  • Combine all ingredients.
  • This salad works well without any dressing, but if desired, you can add a small amount of olive oil & rice vinegar.
