RECIPE: Spinach Sauté

Here's an easy, delicious and healthy side dish to bring to a Thanksgiving gathering. 

Ingredients:
  • 1 large onion, halved and cut into slices
  • 1-2 cloves garlic, minced
  • 8 ounces mushrooms, cleaned and thickly sliced
  • 8 ounces spinach
  • 1 Tbsp. olive oil
  • 1-2 Tbsp. grated parmesan cheese
  • black pepper & optional sodium-free seasonings
Instructions:
  • Heat olive oil in a deep skillet or sauce pan.
  • Separate sliced onion and sauté until almost tender.
  • Add garlic and mushrooms and sauté for about 1 minute.
  • Add spinach, and if needed 1 Tbsp. water.
  • Stir and turn as needed until spinach is hot and wilted. 
  • Add black pepper and seasonings to taste.
  • Transfer to serving bowl and sprinkle with Parmesan cheese.
