Here's an easy, delicious and healthy side dish to bring to a Thanksgiving gathering.

- 1 large onion, halved and cut into slices
- 1-2 cloves garlic, minced
- 8 ounces mushrooms, cleaned and thickly sliced
- 8 ounces spinach
- 1 Tbsp. olive oil
- 1-2 Tbsp. grated parmesan cheese
- black pepper & optional sodium-free seasonings
- Heat olive oil in a deep skillet or sauce pan.
- Separate sliced onion and sauté until almost tender.
- Add garlic and mushrooms and sauté for about 1 minute.
- Add spinach, and if needed 1 Tbsp. water.
- Stir and turn as needed until spinach is hot and wilted.
- Add black pepper and seasonings to taste.
- Transfer to serving bowl and sprinkle with Parmesan cheese.
