After the holidays, we can probably all use some extra brain power! Here's an awesome salad recipe with lots of ingredients that support a healthy brain.

Salad Ingredients:
- 8 ounces smoked salmon, roughly chopped
- 1 avocado, peeled, pitted and diced
- 4 cups baby spinach (or mixed greens)
- 1/2 cup fresh blueberries
- 1/4 cup light feta or blue cheese crumbles
- 1/4 cup chopped walnuts (optional)
- half a red onion, thinly sliced
- honey chia seed vinaigrette (see below)
Honey Chia Seed Vinaigrette Ingredients:
- 1/3 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon chia seeds
- 1 tablespoon honey
Salad Instructions:
- Toss all ingredients together until combined. Drizzle or toss with vinaigrette.
Vinaigrette Instructions:
- Whisk all the ingredients together until combined and emulsified.
