RECIPE: Brain-Power Salad

After the holidays, we can probably all use some extra brain power! Here's an awesome salad recipe with lots of ingredients that support a healthy brain.

Makes two servings.

Salad Ingredients:
  • 8 ounces smoked salmon, roughly chopped
  • 1 avocado, peeled, pitted and diced
  • 4 cups baby spinach (or mixed greens)
  • 1/2 cup fresh blueberries
  • 1/4 cup light feta or blue cheese crumbles
  • 1/4 cup chopped walnuts (optional)
  • half a red onion, thinly sliced
  • honey chia seed vinaigrette (see below)

Honey Chia Seed Vinaigrette Ingredients:
  • 1/3 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon chia seeds
  • 1 tablespoon honey

Salad Instructions:
  • Toss all ingredients together until combined. Drizzle or toss with vinaigrette. 

Vinaigrette Instructions:
  • Whisk all the ingredients together until combined and emulsified.
