RECIPE: Date Nut Snowballs

Holiday baked goods and desserts can be very tempting this time of year. A great strategy to avoid those extra calories, while still satisfying your sweet tooth, is to make a healthy but delicious version of a decadent treat!

Ingredients:
  • 1.5 tablespoons unsweetened shredded coconut
  • 3.5 ounces pitted dried dates (about 14 dates)
  • 15 whole almonds
  • 1/4 teaspoon ground cinnamon
Instructions:
  • Spread coconut on a plate. 
  • Place dates, almonds, and cinnamon in a food processor and process until finely chopped.
  • Form rounded 1/2 teaspoonfuls of the mixture into balls with your fingers. 
  • Roll in coconut, pressing to coat.
