RECIPE: Mackerel & Soba

A bowl of hot soba noodles is a traditional evening New Year’s Eve dish in Japan. The noodles symbolize the bridge between the previous year and the New Year. 

AAY! member & native of Japan, Sally R has shared with us a recipe for soba noodles with a healthy, modern twist. This recipe serves two.

Mackerel Ingredients:
  • 2 mackerel pike (Pacific Saury)
  • 1 tablespoon grated daikon radish 
  • 1/4 teaspoon low-sodium soy sauce 

Soba Ingredients:
  • 1 package of Japanese soba noodles (6 oz)
  • 1/2 bag Trader Joe's Herb Salad Mix
  • 1 tomato, sliced
  • 1 persian cucumber, sliced
  • 2 green onions, chopped
  • 1/2 cup grated daikon radish
  • 3 tablespoons sesame oil
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon rice vinegar
  • 1 tablespoon grated ginger
  • 1 garlic clove, grated
  • Juice of 1 whole lemon (at least 3 tablespoons)
Mackerel Instructions:
  • Clean and grill the mackerel.
  • Garnish with the grated daikon radish and soy sauce. 
Soba Instructions:
  • Cook the soba noodles according to package instructions.
  • In a separate bowl mix the daikon radish with the sesame oil, soy sauce, rice vinegar, ginger, garlic and lemon juice. 
  • Mix the liquid mixture with the noodles and toss well. 
  • Toss the noodles with the salad mix, tomatoes, cucumbers and green onions.
  • Serve the grilled mackerel on the side.
