Mackerel Ingredients:
- 2 mackerel pike (Pacific Saury)
- 1 tablespoon grated daikon radish
- 1/4 teaspoon low-sodium soy sauce
Soba Ingredients:
- 1 package of Japanese soba noodles (6 oz)
- 1/2 bag Trader Joe's Herb Salad Mix
- 1 tomato, sliced
- 1 persian cucumber, sliced
- 2 green onions, chopped
- 1/2 cup grated daikon radish
- 3 tablespoons sesame oil
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon rice vinegar
- 1 tablespoon grated ginger
- 1 garlic clove, grated
- Juice of 1 whole lemon (at least 3 tablespoons)
- Clean and grill the mackerel.
- Garnish with the grated daikon radish and soy sauce.
Soba Instructions:
- Cook the soba noodles according to package instructions.
- In a separate bowl mix the daikon radish with the sesame oil, soy sauce, rice vinegar, ginger, garlic and lemon juice.
- Mix the liquid mixture with the noodles and toss well.
- Toss the noodles with the salad mix, tomatoes, cucumbers and green onions.
- Serve the grilled mackerel on the side.
