RECIPE: Peach Quinoa with Flax Seeds & Nuts

Tired of the same old breakfast? This Peach Quinoa will certainly brighten up your mornings! This recipe is for four servings.

Ingredients:
  • 1 cup quinoa, dry
  • 2 cup unsweetened soy (or almond) milk
  • 1/4 tsp allspice
  • 2 medium peaches, peeled & diced or 1.5 cups of frozen peaches
  • 2 tablespoons ground flaxseed
  • 2 tablespoons hazelnuts, chopped
Instructions:
  • Place quinoa, milk, allspice and peaches in a medium saucepan. 
  • Bring to boil, stirring frequently. 
  • Cover pan and simmer on low heat for approx. 20 minutes until quinoa is tender. 
  • Top with ground flaxseed and chopped hazelnuts.
