Tired of the same old breakfast? This Peach Quinoa will certainly brighten up your mornings! This recipe is for four servings.

- 1 cup quinoa, dry
- 2 cup unsweetened soy (or almond) milk
- 1/4 tsp allspice
- 2 medium peaches, peeled & diced or 1.5 cups of frozen peaches
- 2 tablespoons ground flaxseed
- 2 tablespoons hazelnuts, chopped
- Place quinoa, milk, allspice and peaches in a medium saucepan.
- Bring to boil, stirring frequently.
- Cover pan and simmer on low heat for approx. 20 minutes until quinoa is tender.
- Top with ground flaxseed and chopped hazelnuts.
