RECIPE: Crunchy Peanut Slaw

A very simple, healthy and delicious side dish.

Makes eight servings
305 calories per serving

Ingredients:
  • 1 medium head green cabbage, shredded
  • 1 1/2 cups roasted unsalted peanuts
  • 1 bunch green onions, sliced
  • 1 cup cilantro, chopped
  • 1/2 cup oil (canola or olive oil work well)
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon soy sauce
  • dash of salt & pepper
Instructions:
  • Combine all ingredients in a large bowl and mix well. 
  • Refrigerate for two hours before serving.
