RECIPE: Spaghetti Squash Rice Bowl

Spaghetti squash makes a great substitute for pasta noodles. And it's fun to prepare & to eat!

Makes one serving
326 calories per serving

Ingredients:
  • 2/3 cup of cooked Trader Joe's Organic Brown Rice 
  • 1 1/2 cups of cooked spaghetti squash (one squash yields about 6-8 cups of noodles)
  • 1/2 cup of Trader Joe's Traditional Marinara Sauce 
  • 1 cup of chopped raw spinach 
  • 1/4 medium avocado, cut into small cubes 
Instructions:
  • Prepare spaghetti squash: 
    • Cut the squash in half length-wise (be careful!) and scoop out the seeds. 
    • Flip the squash halves upside down in a baking dish or microwave-safe dish filled with about one inch of water. 
  • Cook the squash one of these two ways: 
    • Microwave on high for 5 minutes. The squash is ready when you can easily pierce a fork through the flesh all the way to the peel. Continue microwaving on high for another 2 to 5 minutes as needed. OR
    • Oven: Preheat to 400 degrees and cook 30-45 minutes until tender.
  • Use a fork to scrape the strands of the squash from the inside. Measure out 1 1/2 cups of "noodles" per serving.
  • Prepare brown rice according to package instructions. 
  • Layer the following ingredients in a microwave-safe bowl: Rice, Spaghetti Squash, Marinara Sauce and Spinach.
  • Microwave on HIGH for 3 minutes OR heat ingredients on stovetop.
  • Mix all of the ingredients together, top with avocado...and enjoy!
