RECIPE: Cauliflower Mac & Cheese


INGREDIENTS:
  • 2 cups of cauliflower florets
  • 3 oz. whole wheat pasta or brown rice pasta
  • 2 tablespoons nonfat Greek yogurt
  • ¼ cup Trader Joe's Light Shredded 3 Cheese Blend
  • 2 wedges The Laughing Cow Light Creamy Swiss cheese
  • 8 teaspoons grated parmesan cheese
  • Optional: 2 tablespoons Trader Joe's Pico de Gallo Salsa

INSTRUCTIONS:
  • Cauliflower: steam, drain, roughly chop and place in bowl. Cover to keep warm.
  • Pasta: cook per package instructions and stir into cauliflower. Cover to keep warm.
  • In a sauce bowl, mix Greek yogurt, cheese and Laughing Cow cheese wedges. Heat and stir well for 1 minute on medium to high heat until cheeses have melted.
  • Add cheese mixture to the large bowl and thoroughly stir.
  • Top with parmesan cheese & optional salsa and enjoy!

Makes 2 serving (298 calories per serving)
