RECIPE: Mustard Salmon & Brussels Sprouts

INGREDIENTS:
  • 2 tablespoons Dijon mustard
  • 3 tablespoons soy sauce
  • 6 tablespoons olive oil
  • 2 cloves garlic, chopped
  • ½ pound of salmon
  • 1 pound Brussels sprouts
  • Black pepper to taste

INSTRUCTIONS:
For Salmon: 
  • Mix first four ingredients well and rub salmon with half the mixture. 
  • Place salmon on grill or oiled pan for 3-5 minutes. Flip to other side for another 3-5 minutes. 
  • Once salmon turns white, it is cooked. 
  • Remove from heat and add remaining mixture on top.
For Brussels Sprouts:
  • Preheat oven to 375 F. 
  • Place Brussels sprouts on baking sheet, and sprinkle pepper, and olive oil equally all over.
  • Place in oven for 25 mins.
Serve salmon and Brussels sprouts with a whole grain of your choice, such as brown rice, quinoa or whole wheat couscous.
