Beet Salad


INGREDIENTS:
  • 3 beets (peeled & steamed)*
  • Seeds of 2 medium pomegranates **
  • 1/2 cup walnuts, chopped or blended
  • 2 tablespoons Vegenaise (in refrigerated section of Whole Foods) or light sour cream
* To save time, you can purchase steamed beets from Trader Joe's.
** If you don't want to seed the pomegranates yourself, you can purchase just the seeds from Trader Joe's.

INSTRUCTIONS:
  • Shred the beets
  • Mix all ingredients together
  • You can eat as is, or serve on a bed of lettuce or spinach.
