INGREDIENTS:
- 3 beets (peeled & steamed)*
- Seeds of 2 medium pomegranates **
- 1/2 cup walnuts, chopped or blended
- 2 tablespoons Vegenaise (in refrigerated section of Whole Foods) or light sour cream
** If you don't want to seed the pomegranates yourself, you can purchase just the seeds from Trader Joe's.
- Shred the beets
- Mix all ingredients together
- You can eat as is, or serve on a bed of lettuce or spinach.
