- whole wheat OR gluten-free pizza crust (Whole foods carries a variety.)
- handful of fresh mint leaves (minced)
- handful of fresh basil (minced)
- handful of arugula
- 1/2 fresh leek OR frozen leeks (Trader Joe's carries frozen leeks.)
- 6 red grapes (halved)
- 3 fresh black mission figs (sliced)
- shredded cheese* (shredded light mozzarella OR to make it dairy-free try Daiya mozzarella shreds or almond cheese)
- olive oil
Prep:
- Slice the leek and let it sit while you prep the rest of your ingredients.
- Preheat the oven to 350.
- Mince the mint and basil.
- Slice the grapes in half.
- Slice the figs lengthwise to get flat pieces.
- Sprinkle a serving of shredded cheese (1 oz) on the pizza crust.
- Add sliced leeks.
- Start layering the mint, basil and arugula.
- Arrange grape & fig pieces so each pizza slice will have a fig and a grape.
- Drizzle some olive oil
Bake:
- Place on a pizza pan and bake at 350 for 10-15 minutes, depending on your desired crispness.
- Check occasionally and take it out when the cheese is melted and the crust looks crisp.
