RECIPE: Whole Wheat Berry Pancakes

When you're in the mood for something sweet, you don't have to turn to sugar. You can get creative with delicious flavors like cinnamon, cardamom, vanilla & cloves. Try this recipe for a sweet, but nourishing breakfast.

INGREDIENTS:

Pancakes
  • 2 cups - whole wheat flour
  • 4 egg whites
  • 1/2 cup raspberries 
  • 1 cup blueberries
  • 1/4 cup sliced almonds
  • 2 cups almond milk
  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp cloves
  • 1 tsp pure bourbon vanilla extract
  • 2 tsp baking powder
Optional Toppings:
  • additional berries
  • mint
  • pure maple syrup
  • honey

INSTRUCTIONS:
  • Mix all ingredients well.
  • Lightly oil a frying pan or griddle with hazelnut oil (or other oil of your choice).
  • Scoop the batter into pan, using approximately 1/4 cup per pancake.
  • Heat pan on medium.
  • Cook first side until bubbles form on top, about three minutes; then flip and cook other side until it, too, is brown, about two minutes. 
  • Serve immediately and enjoy with your choice of healthy toppings.
