When you're in the mood for something sweet, you don't have to turn to sugar. You can get creative with delicious flavors like cinnamon, cardamom, vanilla & cloves. Try this recipe for a sweet, but nourishing breakfast.
INGREDIENTS:
Pancakes
- 2 cups - whole wheat flour
- 4 egg whites
- 1/2 cup raspberries
- 1 cup blueberries
- 1/4 cup sliced almonds
- 2 cups almond milk
- 1 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp cloves
- 1 tsp pure bourbon vanilla extract
- 2 tsp baking powder
Optional Toppings:
- additional berries
- mint
- pure maple syrup
- honey
INSTRUCTIONS:
- Mix all ingredients well.
- Lightly oil a frying pan or griddle with hazelnut oil (or other oil of your choice).
- Scoop the batter into pan, using approximately 1/4 cup per pancake.
- Heat pan on medium.
- Cook first side until bubbles form on top, about three minutes; then flip and cook other side until it, too, is brown, about two minutes.
- Serve immediately and enjoy with your choice of healthy toppings.
