RECIPE: Wild Arugula & Warm Brown Rice Salad

When you're in a rush and need a quick, healthy, satisfying lunch or dinner, this is the perfect go-to meal. 

INGREDIENTS: 
  • 2 cups Wild Arugula 
  • 1/2 cup cooked brown rice
  • 3 oz. cooked chicken
  • Trader Joe's Hot & Sweet Mustard as dressing

INSTRUCTIONS:
  1. Cook the brown rice. If you're in a hurry, use Trader Joe's frozen brown rice. 
  2. Cook (saute, grill or bake) the chicken or use pre-cooked chicken, such as Trader Joe's Grilled Chicken Strips or Just Chicken. Cut into bite-sized pieces. 
  3. Combine brown rice & chicken in a bowl. Add arugula and mustard to your taste. Mix well.
  4. Enjoy!
