INGREDIENTS:
- 2 cups Wild Arugula
- 1/2 cup cooked brown rice
- 3 oz. cooked chicken
- Trader Joe's Hot & Sweet Mustard as dressing
- Cook the brown rice. If you're in a hurry, use Trader Joe's frozen brown rice.
- Cook (saute, grill or bake) the chicken or use pre-cooked chicken, such as Trader Joe's Grilled Chicken Strips or Just Chicken. Cut into bite-sized pieces.
- Combine brown rice & chicken in a bowl. Add arugula and mustard to your taste. Mix well.
- Enjoy!
