RECIPE: Quinoa Pasta with Kale & Ground Turkey

Here's a delicious & quick weeknight dinner. Serves four.

INGREDIENTS: 
  • 1/2 bag of Trader Joe's Brown Rice and Quinoa Pasta
  • 2/3 jar of Trader Joe's Organic Marinara Sauce, No Salt Added
  • 1/2 lb ground 99% lean turkey
  • 1 or 2 chopped red peppers 
  • Couple handfuls of chopped kale
  • Parmesan cheese
INSTRUCTIONS:

    • Cook pasta according to directions on bag. 
    • Spray medium stir-fry pan with grapeseed oil and sauté the vegetables until cooked.
    • Remove vegetables from pan.
    • Cook ground turkey until no longer pink.
    • Add vegetables to meat and stir together.
    • Add sauce to meat mixture and cook over medium heat until warm.
    • Divide pasta into four plates.
    • Ladle sauce over pasta. 
    • Sprinkle grated Parmesan cheese on top.
