Here's a delicious & quick weeknight dinner. Serves four.
INGREDIENTS:
- 1/2 bag of Trader Joe's Brown Rice and Quinoa Pasta
- 2/3 jar of Trader Joe's Organic Marinara Sauce, No Salt Added
- 1/2 lb ground 99% lean turkey
- 1 or 2 chopped red peppers
- Couple handfuls of chopped kale
- Parmesan cheese
INSTRUCTIONS:
- 1/2 bag of Trader Joe's Brown Rice and Quinoa Pasta
- 2/3 jar of Trader Joe's Organic Marinara Sauce, No Salt Added
- 1/2 lb ground 99% lean turkey
- 1 or 2 chopped red peppers
- Couple handfuls of chopped kale
- Parmesan cheese
- Cook pasta according to directions on bag.
- Spray medium stir-fry pan with grapeseed oil and sauté the vegetables until cooked.
- Remove vegetables from pan.
- Cook ground turkey until no longer pink.
- Add vegetables to meat and stir together.
- Add sauce to meat mixture and cook over medium heat until warm.
- Divide pasta into four plates.
- Ladle sauce over pasta.
- Sprinkle grated Parmesan cheese on top.
