RECIPE: Portable Snack-Sized Baked Oatmeal

Make this recipe on the weekend and you'll have six grab-n-go snacks set for the week. 

INGREDIENTS:

  • 1 cup rolled oats
  • 2 tablespoons chia seed (or ground flax seed)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • pinch of fine grain sea salt
  • 1/2 teaspoon baking powder
  • 1 cup almond milk
  • 1.5 teaspoon vanilla extract
  • 2 tablespoons pure maple syrup
  • 1 peach (or your choice of fruit), chopped
  • 1/3 cup walnuts or pecans, chopped
INSTRUCTIONS:

    • Preheat oven to 350. 
    • Use 6 mini mason jars (about 4 oz.) and remove lids. Alternatively, you can use 3 larger jars if you plan to eat the oatmeal as a meal rather than a snack.
    • In a large bowl, mix together the oats, chia (or ground flax) seed, cinnamon, nutmeg, salt, and baking powder.
    • Add the almond milk, vanilla, and maple syrup and stir until combined. Fold in the chopped fruit and nuts.
    • Keep stirring the mixture so some of the milk will absorb. Divide the mixture between the 6 mason jars (about 1/3 cup mixture each). If any milk remains at the bottom of the bowl, divide it between the jars. Gently push the oatmeal down with your fingers.
    • Bake at 350 for 22-25 minutes on a small baking sheet, or until slightly firm and golden on top. Allow to cool completely (about an hour) and then place the lids on and put the jars in the fridge. 
    • You now have six grab-n-go snacks set for the week!
