RECIPE: Quinoa & Spinach Salad

Here's a simple & delicious salad that works well for either lunch
or dinner. 

INGREDIENTS:

  • 2 cups spinach
  • 2/3 cup quinoa, cooked 
  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup shelled edamame
  • 1/4 cup slivered almonds
  • 1/4 cup dried cherries 
  • Crumbled cheese (optional)
  • Champagne vinaigrette
INSTRUCTIONS:
Simply mix all ingredients together, and then toss with champagne vinaigrette.
