Here's a simple & delicious salad that works well for either lunch or dinner.
INGREDIENTS:
- 2 cups spinach
- 2/3 cup quinoa, cooked
- 1/2 cup fresh strawberries, sliced
- 1/2 cup shelled edamame
- 1/4 cup slivered almonds
- 1/4 cup dried cherries
- Crumbled cheese (optional)
- Champagne vinaigrette
INSTRUCTIONS:
Simply mix all ingredients together, and then toss with champagne vinaigrette.
