This super healthy, yummy pasta dish looks gourmet, but takes only a few minutes to prepare.

- 1 large zucchini
- 1 large yellow squash
- 1 avocado
- large handful fresh cilantro
- 1/2 cup nonfat greek yogurt
- 1 Tablespoon olive oil
- 1 clove garlic
- juice from one lime
- 1/2 c. hot vegetable stock
- Optional: basil, red pepper flakes, additional cilantro for garnish
Instructions for Noodles:
- Use a vegetable peeler to shave long wide strips from the zucchini and yellow squash. (Reserve the seedy center portion for another use.)
- Place the strips into boiling vegetable stock for 15 seconds.
- Drain well, but reserve the stock for the sauce.
Instructions for Sauce:
- Blend avocado and the next five ingredients in a food processor until smooth.
- Add stock to avocado mixture and blend well.
- Layer noodles onto plates.
- Ladle sauce over noodels.
- Top with basil, cilantro, and red pepper flakes.
