Zucchini Pappardelle with Avocado Cream Sauce

This super healthy, yummy pasta dish looks gourmet, but takes only a few minutes to prepare.

Ingredients:
  • 1 large zucchini
  • 1 large yellow squash
  • 1 avocado
  • large handful fresh cilantro
  • 1/2 cup nonfat greek yogurt
  • 1 Tablespoon olive oil
  • 1 clove garlic
  • juice from one lime
  • 1/2 c. hot vegetable stock
  • Optional: basil, red pepper flakes, additional cilantro for garnish
Instructions for Noodles:
  • Use a vegetable peeler to shave long wide strips from the zucchini and yellow squash. (Reserve the seedy center portion for another use.)
  • Place the strips into boiling vegetable stock for 15 seconds.
  • Drain well, but reserve the stock for the sauce.
Instructions for Sauce:
  • Blend avocado and the next five ingredients in a food processor until smooth.
  • Add stock to avocado mixture and blend well.
Put it altogether:

  • Layer noodles onto plates. 
  • Ladle sauce over noodels. 
  • Top with basil, cilantro, and red pepper flakes.
