RECIPE: Vegetable Frittata

With just 92 calories per serving, this healthy & delicious frittata is the perfect dish to serve when you have friends over for brunch. (Makes 4 servings)

Ingredients:
  • 4 large egg whites
  • 2 large whole eggs
  • 3 stalks of green onions chopped
  • 1⁄2 medium red bell pepper
  • 1 cup fresh spinach, chopped
  • 1 teaspoon lemon juice
  • 1⁄2 teaspoon Trader Joe's 21 Seasoning Salute
  • Optional: 4 slices of avocado
Instructions:
  • Preheat oven to 350 degrees.
  • Spray a baking pan with nonstick spray.
  • Place the spinach, green onions & red pepper in the baking pan.
  • In a bowl, beat the eggs until frothy.
  • Season the eggs with 21 Seasoning Salute and lemon juice.
  • Pour the eggs evenly into the baking dish.
  • Bake for 20 minutes (or longer depending on your oven).
  • Cut into four servings and then top each serving with a slice of avocado.
