- 4 large egg whites
- 2 large whole eggs
- 3 stalks of green onions chopped
- 1⁄2 medium red bell pepper
- 1 cup fresh spinach, chopped
- 1 teaspoon lemon juice
- 1⁄2 teaspoon Trader Joe's 21 Seasoning Salute
- Optional: 4 slices of avocado
- Preheat oven to 350 degrees.
- Spray a baking pan with nonstick spray.
- Place the spinach, green onions & red pepper in the baking pan.
- In a bowl, beat the eggs until frothy.
- Season the eggs with 21 Seasoning Salute and lemon juice.
- Pour the eggs evenly into the baking dish.
- Bake for 20 minutes (or longer depending on your oven).
- Cut into four servings and then top each serving with a slice of avocado.
