Beets are a powerhouse of nutrition. These colorful root vegetables are a good source of iron, vitamin B6, vitamin C, folate, potassium, magnesium, fiber and more! Plus they are delicious.

- 4 small steamed beets (Trader Joe's sells packaged steamed beets, or you can get raw beets and steam yourself.)
- 1 tablespoon lemon juice
- Pinch of salt
- 1/2 tablespoon olive oil
- Black pepper to your taste
- 1 tablespoon feta cheese
- Plenty of salad greens
- A few honeyed walnuts
Instructions:
- Cube the beets and put them on a plate.
- Whisk together lemon juice and salt in a small bowl.
- Add olive oil, whisking until combined.
- Season dressing with pepper and spoon 1 tablespoon over beets.
- Let it set for 15-20 minutes.
- Sprinkle feta over beets.
- Right before serving, toss the greens with remaining dressing add the beets and a handful of honeyed walnuts.
