RECIPE: Beet and Feta Salad

Beets are a powerhouse of nutrition. These colorful root vegetables are a good source of iron, vitamin B6, vitamin C, folate, potassium, magnesium, fiber and more! Plus they are delicious.

Ingredients:
  • 4 small steamed beets (Trader Joe's sells packaged steamed beets, or you can get raw beets and steam yourself.)
  • 1 tablespoon lemon juice
  • Pinch of salt
  • 1/2 tablespoon olive oil 
  • Black pepper to your taste
  • 1 tablespoon feta cheese
  • Plenty of salad greens
  • A few honeyed walnuts

Instructions:
  • Cube the beets and put them on a plate. 
  • Whisk together lemon juice and salt in a small bowl. 
  • Add olive oil, whisking until combined. 
  • Season dressing with pepper and spoon 1 tablespoon over beets. 
  • Let it set for 15-20 minutes. 
  • Sprinkle feta over beets. 
  • Right before serving, toss the greens with remaining dressing add the beets and a handful of honeyed walnuts.
