RECIPE: Roasted Cauliflower

When roasted with a little olive oil, cauliflower florets turn wonderfully sweet, crisp and caramel-brown.  In addition to lots of great fiber, cauliflower is packed with vitamin C, vitamin K, folate and vitamin B6. This is so delicious, you can even serve to picky eaters who don't usually like veggies!

Makes 4 servings
165 calories per serving

Ingredients:
  • 1 head cauliflower (about 2 pounds), cut into bite-size florets
  • 1/4 cup extra virgin olive oil
  • 5 garlic cloves, roughly chopped
  • 1 teaspoon salt
  • 1/4 teaspoon crushed red pepper
  • 2 teaspoons roughly chopped fresh thyme leaves

Instructions:
  • Preheat oven to 450 degrees.
  • Toss the cauliflower with the olive oil, garlic, and red pepper on a baking sheet.
  • Sprinkle with salt and thyme and toss again.
  • Roast until golden and tender, about 20 minutes.
  • Transfer to a bowl and serve.
