- 3 oz. salmon fillet
- ¼ teaspoon lemon pepper
- fresh or dried dill to your taste (optional)
- 1 garlic clove or frozen garlic cube
- 1 cup stir-fried vegetables
- splash of balsamic vinegar
- Lightly spray a medium stir-fry pan with grapeseed oil.
- Add the garlic and heat for 30 seconds.
- Sauté the veggies with a splash of balsamic vinegar until golden brown. Set aside on a plate or bowl.
- Use the same pan to cook the salmon.
- Season both sides of the salmon with lemon pepper and dill.
- Add fish to pan, and cook 6 minutes on each side.
- Once the salmon is cooked, add the vegetables to the pan.
- Heat over medium until the veggies are hot.
- You can enjoy the fish with a squeeze of lemon.
