RECIPE: Skillet Salmon

INGREDIENTS:

  • 3 oz. salmon fillet  
  • ¼ teaspoon lemon pepper
  • fresh or dried dill to your taste (optional)
  • 1 garlic clove or frozen garlic cube
  • 1 cup stir-fried vegetables
  • splash of balsamic vinegar 


INSTRUCTIONS:
  • Lightly spray a medium stir-fry pan with grapeseed oil.
  • Add the garlic and heat for 30 seconds.
  • Sauté the veggies with a splash of balsamic vinegar until golden brown. Set aside on a plate or bowl.
  • Use the same pan to cook the salmon.
  • Season both sides of the salmon with lemon pepper and dill.
  • Add fish to pan, and cook 6 minutes on each side. 
  • Once the salmon is cooked, add the vegetables to the pan.
  • Heat over medium until the veggies are hot.
  • You can enjoy the fish with a squeeze of lemon.
